Health Benefits of Broccoli

Broccoli is from the cruciferous family. Its dark green color doesn't lie; it is chock full of nutrients, making it a nutrient powerhouse. Filled with glucosinolates and antioxidants, it boosts our immune system. Additionally, it is a fun texture. Two downsides to broccoli that makes some hesitant to enjoy it could be the strong rotten egg smell if cooked too long and, for younger eaters, a bitter taste. However, the most nutritious and the best ways to consume broccoli are raw, steamed (less than four minutes), or cooked in olive oil. Cooking with excess water will reduce nutrients, and the microwave decimates over half of its nutrients within two minutes. So today, I am sharing my favorite way to eat raw broccoli. Easy to chew, fresh, and flavorful. If you can, try to find broccoli at your local farmer’s market or grow it yourself. Eaten within 2-3 days of harvesting means you are consuming a superfood that fights disease exponentially more than many other veggies. (Eating on the Wild Side, Jo Robinson, pgs 161-164)

Broccoli Slaw

This recipe is a quick and easy way to make broccoli slaw. It is savory and fresh, with as much bite as you want and plenty of crunch. It’s perfect for summer weather. This slaw is versatile, able to be enjoyed on a sandwich, on tacos, as a bed for a grilled meat or meat substitute, or as a side! I normally pair it with a protein source for a balanced meal and enjoy it.

Vegetable Chopper

Regular chopping knife

Mixing bowl

Rubber spatula

Cutting board

Ingredients:

2 Heads of broccoli

1 cup of another vegetable of choice (White onion, Raddish, Corn, Carrot, deseeded cucumber)

1 cup of another vegetable (White onion, Raddish, Sweet Corn, Carrot, de-seeded cucumber)

3 tbsp vegan mayo

Minced garlic

Paprika, black pepper, and salt to taste.

(optional: tsp dill seed)

Lemon

Instructions:

Wash all of your veggies thoroughly

Use the vegetable chopper to chop broccoli and add to your mixing bowl

Chop your other chosen veggies and add them to the mixing bowl. The combinations I recommend are onion and cucumber or corn and radish)

Mix veggies well until evenly dispersed.

Squeeze in lemon

Add Garlic, Mayo, and Seasonings, and mix well.

All Done!
